2 small boneless skinless chicken breasts (1/2 lb.)
1/2 cup chicken broth or water
1 cup STOVE TOP Everyday Stuffing Mix for Chicken
1 cup frozen mixed vegetables, thawed

Let's Make It
Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 min. on each side or until lightly browned on both sides. Remove chicken from skillet; cover to keep warm.
Add broth to skillet. Stir in stuffing mix just to moisten. Top with vegetables and chicken; cover. Reduce heat to low; cook 10 min. or until chicken is cooked through and vegetables are heated through.
If you use boneless skinless chicken breasts often in recipes, package them for the freezer in recipe-size portions. This lets you thaw only the amount you need.
