1-1/2 cups chilled cooked long-grain white rice

Let's Make It
Heat oil in large nonstick skillet on medium-high heat. Add ham and vegetables; stir-fry 4 min.
Add shrimp; stir-fry 4 min. or until shrimp turn pink.
Add remaining ingredients; stir-fry 2 to 3 min. or until egg is set and ham mixture is heated through.
Add any extra vegetables, such as chopped carrots, zucchini and/or bell peppers, to the hot oil in skillet along with the ham and other vegetables.
This recipe is a great way to use up leftover cooked rice.
For a meatless version, substitute extra chopped vegetables and/or cubed tofu for the ham and shrimp.
