Original recipe yields 1 serving
2 1/2 cups Old-Fashioned Quaker Oats
1/2 cup ricotta
1/2 cup plain yogurt
2 large eggs
1/2 cup sweet addition sweetener
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups fresh strawberries, diced, and divided, saving 1/2 cup

1. Preheat oven to 400 degrees F. Line 12 cupcake liners and spray. Or spray and flour pan without cupcake liners.

2. Place all of the ingredients, (except strawberries) in food processor or blender and blend until oats are smooth. Pour in strawberries and give a short burst to incorporate.

3. Divide batter into each cupcake lined pan. Place reserved strawberries on top of each muffin, sprinkle with oatmeal.

4. Bake from 20 to 25 minutes, or until toothpick inserted comes out clean when inserted.
