Original recipe yields 1 serving
2 1/4 pound uncooked lean and fat pork loin/roast
1/2 cup pineapple juice
2 cups water
20 uncooked baby carrots
1 pound uncooked whole white potatoes with skin halved
3 medium uncooked turnips, peeled and quartered
3 medium uncooked parsnips, peeled and cut into equal sized pieces
1 tsp black pepper
2 tsp table salt

Preheat oven to 325 degrees F. Cook roast fat side down in heavy pot with lid for 2.5 hours or until internal temp reaches 185 degrees F. Turn half way through. Remove roast and set aside.

De-glaze pot with pineapple juice. Add water and vegetables and cook covered at 350 degrees F for 2 hours or until for tender.

Returned roast to pot to reheat. Serve and enjoy.
