Original recipe yields 1 serving
1 lb ground beef or turkey, browned
1 small onion, diced
large 1 or 2 zucchini
2 cups cooked rice
1 jar spaghetti sauce, divided
1 egg
1/4 tsp oregano
1/4 tsp garlic powder
Salt & pepper to taste
1/2 cup parmesan cheese, divided in half

Let's Make It
Brown ground meat and onion together and set aside. Cut zucchini in half lengthwise, scoop out the seeds and leave at least half inch of flesh inside.
In a medium bowl mix all of your ingredients together except 1/2 cup of the spaghetti sauce and 1/2 of parmesan cheese.
Put the zucchini in a 9x13 baking dish then scoop your stuffing into them. When the zucchini are stuffed drizzle the remaining spaghetti sauce of them and top with the remaining parmesan cheese.
Cover with foil and bake in preheated 350 degrees F oven for 50 to 60 min.
