Original recipe yields 1 serving
2 bell peppers (any color)
1 box Rosemary and Olive Oil Flavor Quinoa Blend (Or 2 cups cooked Quinoa)
1 cup chopped fresh spinach
1 cup chopped fresh cilantro
3/4 cup diced red onion
1 tablespoon garlic powder
1 1/2 cups Kraft Shredded Mozzarella Cheese, divided

Let's Make It

1. Cut the bell peppers in half. Prepare the quinoa as directed. Prepare grill.

2. Once quinoa is ready, combine with spinach, cilantro, red onion, garlic powder, and one cup of the mozzarella.

3. Pour just a little olive oil on a piece of tin foil long enough to wrap the peppers like a present, and spread it around.

4. Stuff peppers with quinoa mixture, and top with remaining mozzarella. Place stuffed peppers on the tin foil, wrap them up.

5. Grill until cheese is melted (about 20-30 minutes).
