Original recipe yields 1 serving
3 ounces spicy Italian sausage, raw (the spicier the better)
1 medium onion, finely diced
6 cups low sodium fat free chicken stock
4 potatoes, peeled and cut to desired size
Pepper
1 bunch spinach, washed
1/4 cup evaporated milk

Take the wrapping from the sausage and break it up to desired size. Fry meat with onion until no longer pink.

Bring stock to a boil, add the potatoes, meat mixture, and pepper to taste. Boil till potatoes are done. Do not use any salt.

Add spinach and boil till spinach is done (5 minutes). Thicken soup a bit if that’s what you like, but remember you are going to add milk next.

Add milk to soup, do not boil as the milk will curdle.
