Combine yeast & 1 cup of warm water. To this mixture add salt, sugar, 4 cups flour and 3 cups water. Let this stand overnight or 2-3 hours.
Add beaten eggs, melted shortening, and sugar. Knead in enough flour to make dough "right" (about 6 cups). Knead well, let this rise double and knead again. Make into rolls and place on a greased cookie sheet, let rise.
Place in a 400 degrees F oven for 15-20 minutes. Rub top of rolls with the small end of a stick of butter if desired.
