Original recipe yields 1 serving
1/4 cup grated, Kraft Parmesan Cheese
1/2 cup cornmeal
1 medium , eggplant (about 1 1/2 lb.), pared and cut into 1/2 inch slices
Melted butter
1 can pizza sauce
1 cup (4 oz.) Kraft Shredded Mozzarella Cheese
2 tablespoon chopped parsley

Combine Kraft Parmesan Cheese and cornmeal. Dip eggplant into butter, coat with cornmeal mix.

Place eggplant into buttered 15x10 inch pan. Spread eggplant slices with pizza sauce. Combine Kraft Shredded Mozzarella Cheese and parsley, sprinkle over pizza sauce.

Bake at 400 degrees F for 15 - 20 minutes.
