Original recipe yields 1 serving
1 jar spaghetti sauce
1 medium eggplant, sliced thinly
Shredded parmesan cheese
1 brick (16 oz.) mozzarella cheese, sliced

1. Spray a 9x11 pan with non-stick cooking spray.

2. Spread some spaghetti sauce in the bottom of the pan. Layer eggplant slices on top of sauce. Sprinkle parmesan cheese on top of eggplant.

3. Repeat layering until all of the eggplant is used, sprinkling the parmesan cheese over the eggplant with each layer. Use more sauce between layers 2 & 3(usually you'll have 3-4 layers total.)

4. Cover last layer with sauce. Sprinkle with parmesan cheese.

5. Place slices of mozzarella cheese over the entire top using all the mozzarella.

6. Bake at 375 degrees F for 40 minutes.
