Original recipe yields 1 serving
1 large or 2 medium eggplant
4 cloves garlic
4 Tbsp lemon juice
4 Tbsp tahini
1 Tbsp olive oil
1 tsp fresh parsley

Let's Make It

1) Pierce eggplant(s) all over with a fork. Leave stem and top in place. Grill, turning occasionally, until insides are soft and skin is loose.

2) Place eggplant(s) in plastic bag for 5 minutes.

3) In a glass or ceramic bowl, scoop out the eggplant with a wooden spoon. Mash with a fork or potato masher. Do not liquify.

4) Crush garlic and add. Alternately add lemon and tahini, one Tbsp. at a time.

5) Mix and chill. Serve with a splash of olive oil and a few sprigs of parsley.
