Preheat oven to 350 degrees F. Cook ground beef in large pan until fully done. Add in 1/2 cup enchilada sauce or more as seems fit. (Set aside on low heat to keep warm and allow sauce to seep into meat)
In a small pan (preferably metal bottomed) pour in oil. One at a time place a tortilla into oil and flip after 30 seconds. Once you see bubbles emerging from tortilla take out and dab with paper towel to remove excess oil.
One at a time take tortilla and sprinkle with cheese in your hand and then add in 3-4 spoonfuls of the meat. Roll up each and set in dish. After all are in dish pour remaining sauce completely over them and the entire inside of dish (enough to cover each enchilada and bottom of dish).
Place in center rack of oven and cook for 18 minutes or until cheese is fully melted and sauce looks a darker red. Let cool for 2 minutes and serve.
