4 med to large chicken thighs (skin on)
Sauce:
1/2 stick butter or margarine
1 tsp thyme (plus extra for rubbing on chicken)
1 tsp fine grate lemon rind (1/2 lemon)
1/2 tsp dry mustard
Dash of lemon juice (1/2 lemon)

Rub chicken with a good sprinkling of salt, pepper and thyme.

Grill on low coals until done. (See note)

Meanwhile make sauce: Combine all ingredients in microwave cup and microwave for 30 seconds until butter is melted. Stir. Serve on chicken or on the side.
