Start by preheating your oven to 250 degrees F and lining a Pyrex dish big enough for your 2 slices of bologna with foil. After your dish is protected with foil, line the bottom of your pan with bacon. Place the 2 slices of bologna on top of the bacon and coat it with your choice of mustard. You want to make this mustard thick because it will infuse your bologna. Next, take 1/2 of your brown sugar and pack on top of your bologna slices, reserving the other half later. To top off the brown sugar add 4 slices of bacon to each slice of bologna.
Cover and cook for 3 1/2 hours.
Remove from oven and use the remaining brown sugar on top and place back in the oven uncovered for 30 minutes.
