Original recipe yields 1 serving
1/4 cup butter
3 large apples, peeled and sliced thinly
1/4 cup brown sugar (to taste)
1 teaspoon cinnamon (to taste)
Pancake Mixture
6 eggs
1 1/2 cups half-and-half
1 cup flour
1/3 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2-3/4 teaspoon cinnamon
1 1/2 teaspoon vanilla

Preheat oven to 350 degrees F. Grease 9x13 inch baking pan. Melt butter in pan in oven. Place apple slices over bottom of pan, and bake for 10 minutes.

Remove apples, sprinkle with brown sugar and cinnamon.

In a blender, combine pancake ingredient. Spread over apples.

Bake 30-40 minutes. Sprinkle with sugar topping.
