4 chicken breasts cut into strips, seasoned to taste
Olive oil
1 small onion, diced
2 cloves garlic
1 can stewed tomatoes
1 can chicken stock
1 pkg baby shitake mushrooms
1/2 cup white wine
1 can artichoke hearts, drained

Let's Make It

Brown chicken in olive oil and add onion and garlic.

Add tomatoes, chicken stock, mushrooms and wine & bring to a boil.

Simmer for 45 minutes or until most of the sauce evaporates. Before the last 20 minutes stir in artichokes and serve over rice.
