Original recipe yields 1 serving
1 Tbsp margarine or butter
1/3 cup reduced-fat baking mix
1 Tbsp yellow cornmeal
1/2 tsp paprika
1/2 tsp lemon pepper seasoning
1/2 tsp salt
2 egg whites, slightly beaten
1 pound cod (or sole or orange roughy)

Preheat oven to 425°F. Melt butter in rectangular 13x9x2 pan, in oven. In bowl, stir together baking mix, cornmeal, paprika, lemon pepper seasoning and salt.

Dip fish into egg whites, then coat with baking mix. Place in pan.

Bake uncovered for 10 min. Turn fish, bake 10 min longer or until fish flakes easily with fork.
