Original recipe yields 1 serving
4 1/2 pounds potatoes, peeled and chopped
2 1/2 sticks butter, divided
1/4 cup milk
1 cup diced celery
4 slices white bread, torn into pieces
1 cup diced onion
Salt and pepper to taste

Bring a large pot of salted water to a boil. Add potatoes and cook until tender about 15 min. Drain, return to pot and add 1 stick of butter and milk and mash potatoes.

Preheat oven to 350 degrees F. Lightly grease one 2 quart casserole dish. In a small skillet melt 1 stick of butter and cook celery and onion until tender.

In a large bowl, mix together the potatoes, white bread, onion and celery mixture, salt and pepper. Spread into prepared casserole dish, and top with 1/2 stick of melted butter.

Bake for 1 hour.
