Sherry's Turkey Breast with Lemon Sauce

Original recipe yields 1 serving
1-1/2 lb turkey breast, boned, skin on
Salt & pepper to taste
1 Tbsp melted butter
1 can (6 oz.) frozen lemonade concentrate, thawed,
2 tsp dry mustard
1 tsp paprika
1 tsp ground ginger
Lemon wedges for garnish

Lightly sprinkle turkey breast with salt and pepper. Place into shallow roasting pan that has been sprayed with cooking spray. Mix butter and lemonade concentrate. Pour evenly over turkey. Loosely cover with foil.

Bake at 350°F for 1-1/2 hours or until turkey is cooked through.

Remove turkey from pan. Pour juices into small skillet and heat to boiling. Whisk in mustard, paprika, ginger and a pinch of salt. Heat until sauce thickens. Glaze meat with 2 Tbsp. sauce. Spoon remaining sauce around turkey. Garnish with lemon wedges. Thinly slice turkey and serve with additional sauce.
