4 cups SKINNNER lemon pepper penne rigate, uncooked
1/3 cup vegetable oil
1/4 cup white vinegar
1 teaspoon salt
1/2 teaspoon dried thyme leaves
1 lb medium fresh shrimp, cooked, peeled, and deveined
1/2 cup shredded carrot
3 tablespoons chopped fresh parsley (optional)

Cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.

Meanwhile, in a large bowl, whisk together oil, vinegar, salt, and thyme.

Stir in cooled pasta, shrimp, carrot and parsley. Serve immediately or cover and refrigerate 2 hours.
