Dissolve Jell-O in boiling water. Add jellied cranberries and whisk. Spray cooking spray in poinsettia mold and pour in half Jell-O mixture.
With remaining Jell-O, chill until consistency of egg whites. Whisk in Cool Whip and pour over top of firmly set Jell-O. Chill 6 hours or overnight.
Unmold by running small knife or spatula around edge of pan and dipping in hot water for 10 seconds. Unmold onto serving platter with greens around. Roll cream cheese into small balls and in chopped nuts for decoration. Chill until ready to serve.
