Cook the meat thoroughly. Drain the grease from the meat and set aside.
In a separate pan, add oil to pan, warm pan, add frozen hash browns. Keep the hash browns stirred while cooking. When hash browns are halfway cooked, translucent, then add chopped onions and green or red peppers. Beat eggs in a bowl, set aside.
When hash browns are light brown in color, add meat and mix in pan. Then add beaten eggs and cook them all together for about 3- 5 minutes. Take pan off stove. Top with shredded cheese while still warm.
