1 lb bacon or sausage
1 dozen eggs
1 medium onion
1 large green pepper
12 (10") tortillas
2 cups shredded cheddar cheese

Let's Make It

Cook bacon or sausage, set aside. Scramble eggs, onions, green peppers, and add crumbled meat. Put in a bowl.

Put all tortillas on a plate in front of you. Put a serving spoonful of egg and meat mixture on a tortilla, a handful of cheese, and fold over each side and the ends.

Place folded ends downward on a hot greased griddle or skillet and repeat. Cook on both sides top with salsa!
