Original recipe yields 1 serving
3 Tbsp vegetable oil
1 onion, chopped
2 ribs celery, chopped
4 Tbsp all-purpose flour
2 cups water
1 bottle (8-oz.) clam juice
1 can (12-oz.) evaporated milk
1 can (12-oz.) whole potatoes, drained, rinsed and diced
1 tsp dried parsley
Salt and pepper
2 Tbsp bacon bits
1 can (6.5-oz.) minced clams, drained (reserve juice)

1. In a large pan over medium heat, warm oil. Saute onion and celery until softened, about 7 minutes.

2. Add flour and cook, stirring vigorously, for 2 minutes. Add 2 cups water, bottled and reserved clam juice and evaporated milk. Bring to a boil, stirring constantly.

3. Add potatoes and parsley, and then season with salt and pepper. Reduce heat to low and simmer for 10 minutes. Stir in bacon bits and clams, cook for 2 minutes to heat through and serve.
