Original recipe yields 1 serving
1 can (10.75 oz.) can condensed cream of potato soup
1/4 cup butter
2 cups sour cream
2 lb (1 package) frozen hash brown potatoes
1/3 cup finely chopped green onions
2 cups Kraft Shredded Cheddar Cheese, divided
1/4 cup bacon bits (optional)
Salt & pepper to taste
10-12 Ritz Crackers

Preheat oven to 350 degrees F. In a small pot, heat the soup, butter and sour cream over low heat. In a large mixing bowl, combine hash brown potatoes, green onion, and 1 cup cheese. Add heated soup mixture to potatoes. Add bacon bits now if desired. Season with salt & pepper.

Pour potato mixture into 9x13 inch dish. Sprinkle 1 cup of cheese over top of the casserole.

Bake 30 to 40 minutes. Crush Ritz Crackers and top casserole after baking with cracker crust. Serve warm.
