Original recipe yields 1 serving
1/2 cup , plus 2 Tbsp. butter, divided
6 med zucchini, sliced thin
4 med yellow squash, sliced thin
1 pkg (8 ounce) sliced mushrooms
1 onion, chopped
1 tsp salt
1 tsp black pepper
1 sleeve Ritz Crackers, crushed
1/2 cup grated parmesan cheese

1. Melt 1/2 cup butter in large skillet over medium high heat. Add vegetables, cook uncovered for 20 min or so, stirring often. Add salt and pepper. Spoon squash mixture into a 9x13 baking dish- set aside.

2. Preheat oven to 350°F. In a med. saucepan, melt remaining 2 Tbsp. butter over low heat. Stir in crushed crackers and cheese. Sprinkle over casserole.

3. Bake for 45 min.
