Beat sugar and butter at low speed until blended. Increase to high speed for 5 minutes until light and fluffy. Beat in ricotta, vanilla and eggs until well combined. Reduce speed and add flour, salt and baking powder, beat until dough forms.
Drop level Tbsp. on ungreased baking sheet.
Bake 15 min. at 350 degrees F (cookies will be soft) or until lightly golden. Cool on wire rack. Mix confectioners' sugar & milk to making icing. Ice when cool; add sprinkles.
