Boil macaroni until cooked. Rinse with cold water. At same time make hard boiled eggs (see below). Set aside.
Meanwhile - dice celery and onion and add to large bowl. Peel and chop eggs and add to mix. Add in good squirt of mustard (careful not to overdo) and light squirt of ketchup. Season with salt & pepper. Add 3/4 of a jar of mayonnaise and mix thoroughly. (Keep in mind that mayo will absorb into the pasta). Taste mixture for balance adding mustard, ketchup, or salt & pepper if needed.
Once desired taste is achieved - fold in macaroni until well mixed and refrigerate. Top with additional hard boiled egg slices and a light dusting of paprika for garnish. Enjoy.
