1 onion, diced
1/2 cup butter
1 can cream of mushroom soup
1 container (8 oz.) sour cream
1 bag frozen shredded hash browns
2 cups shredded cheese, divided
1/2 cup crackers, crushed (can substitute bread crumbs)

Mix onion, butter, soup, and sour cream in a large bowl. Stir in hash browns until completely coated. Add 1 cup of the shredded cheese and stir until combined.

Spread into a greased casserole dish. Top with remaining cup of shredded cheese and crackers or bread crumbs.

Cover with foil and bake at 375°F for 40-45 minutes or until heated through and bubbly.
