Original recipe yields 1 serving
Meme’s taco meat:
lb 1 1/2 to 2 hamburger meat
1 can (8 oz.) tomato sauce
1/3 cup ketchup
1 pkg taco seasoning
2 dash es chili powder
3 pkg TexMex (MexiKit) cornbread mix
3 eggs
2 cans cream corn
1 medium onion, chopped
cups 2 to 3 Kraft Cheddar Cheese (mild or sharp)

Meme’s taco meat: brown hamburger meat, drain, and put back into pan. Stir in tomato sauce, ketchup, taco seasoning, and chili powder. Simmer about 10-15 minutes, set aside.

Preheat oven to 400 ºF. Cornbread batter: stir together the cornbread mixes, eggs & cream corn.

Spread 1/2 of the cornbread batter on bottom of 13x9 casserole dish or baking pan (metal or glass). Then layer taco meat, onions and cheese, and then top with remaining cornbread batter.

Place in oven for about 25 to 30 minutes or until golden brown on top.
