1 package (10 oz.) frozen spinach, thawed and drained
2 eggs, beaten

In a large skillet, fry bacon, drain, crumble and set aside. Add olive oil and butter to about 1 Tablespoon bacon drippings to the skillet. Cook garlic in oils until lightly browned. Saute spinach in oils and garlic.
Beat eggs, garlic salt, and pepper in a small mixing bowl. Pour over spinach and scramble.
Place mixture in a casserole dish and stir in crumbled bacon and 1 cup parmesan cheese. Top with remaining parmesan cheese and microwave for 3 minutes.
