Original recipe yields 1 serving
10 med to lg. potatoes
1/2 cup chopped onion
2 hardboiled eggs, chopped
2 Tbsp sweet pickle relish
3/4 cup white vinegar
3 tsp mustard
2 Tbsp flour
1/2 tsp salt
1/2 tsp pepper
2/3 cup sugar
2 large Tbsp. mayonnaise

Peel and quarter potatoes. Boil until almost fork tender, drain. Put potatoes in large bowl. Add onions and eggs while potatoes are still hot.

In a med. saucepan, combine sugar and flour and salt. Whisk together sugar and flour and salt until combined. Add vinegar and stir well. On medium heat, cook and let boil softly until thickened.

Remove from heat and stir in mustard. Pour over potato mixture and toss gently. Add mayonnaise and pepper.
