Original recipe yields 1 serving
4 oz boneless skinless chicken breast
1 tsp extra virgin olive oil
Sea salt
Freshly cracked black pepper
Dried sage
1 Tbsp 100% all natural apricot fruit spread
1/4 cup white or yellow onion, sliced
1/6 cup natural almonds, sliced or chopped
Steamed vegetables
oz 1 or 1.5 whole grain couscous
2 Tbsp pitted prunes, chopped

Let's Make It
Preheat oven to 350 degrees F. Put chicken in a baking pan and brush the olive oil on both sides and season. Top with fruit spread, onions, and almonds. Bake for 25 minutes or until fully cooked.
Meanwhile steam the vegetables and cook couscous according to the package directions. Stir in the prunes.
Plate the chicken on top of the couscous and the vegetables on the side. Enjoy!
