Original recipe yields 1 serving
4 boneless skinless chicken breasts, cubed
16 oz broccoli florets
1 cup mayonnaise
1 can condensed cream of chicken soup
1 tsp curry powder
1 cup bread crumbs
Shredded cheese (Colby Jack rec.)
2 cups steamed rice

1. Preheat oven to 375 degrees F.

2. Boil chicken breasts until cooked through. Cube into bite size pieces, set aside.

3. Meanwhile, cook broccoli as package indicates (or steam fresh broccoli florets).

4. Combine mayonnaise and soup, blend well. Add curry until mixed well.

5. Place broccoli in bottom of 13x9 baking dish. Top with cubed chicken then soup mix. Sprinkle with bread crumbs.

6. Bake for 25-30 minute or until heated through

7. Sprinkle with cheese and serve over 1/2 cup rice.
