Cut chicken into thin slices. Whisk the eggs for 10 seconds. Add salt and pepper, mix well. Place flour in wide dish for breading. Add paprika to flour, mix well. Coat both sides of chicken with flour, then the egg mixture and back to the flour.
Put chicken in heated oil, cook several minutes on each side until lightly crisped. Remove chicken from griddle and set aside. If needed, add a dash of olive oil to the griddle then add the shallots and garlic to saute for a few minutes. Add wine and simmer for about 10 minutes. Add butter, lemon juice and broth. Whisk until well blended.
Add chicken back to the griddle. Lay lemon slices on top. Simmer for 20 to 30 minutes.
