Original recipe yields 1 serving
1-1/2 cups rice
1-1/2 cups chicken broth (low sodium)
1 head fresh broccoli florets
1/2 pound honey ham sliced/shredded or diced into bite sized pieces
2 tsp butter
1/2 pound shredded sharp cheddar
1/2 cup skim milk
1/4 tsp fresh ground pepper
1 tsp ground mustard
1/4 cup fontina cheese, cut into small pieces
BBQ, mesquite, or sour cream chips (optional topping)

Prepare rice according to box instructions except use chicken broth instead of the water.

Fold in prepared rice, broccoli florets, ham, butter, shredded cheddar, milk, pepper and mustard into casserole dish. Add the small pieces of fontina on top, then add potato chips (optional).

Bake at 350 degrees F for 20 minutes.
