Original recipe yields 1 serving
1 lb pork loin, cut into small cubes
1/2 cup chopped green bell pepper
1/4 cup chopped onion
2-3 tablespoons ground cumin
1 tablespoon garlic powder
4 cups long grain white rice, cooked
1 can (14 oz.) black beans, drained and rinsed
1 can (14 oz.) kernel corn, drained
1 1/2 cups Kraft Shredded Cheddar Cheese
Breakstone’s Sour Cream (optional)

Let's Make It
In large frying pan, saute pork with green pepper and onion until pork is cooked through. Sprinkle with cumin and garlic powder and heat for a few more minutes to combine flavors. Combine cooked rice with black beans and corn, add pork mixture.
Turn mixture into 11 x 14 casserole dish. Sprinkle with Kraft Shredded Cheddar Cheese.
Bake in 350°F oven for 20 minutes until hot. Serve with dollop of sour cream.
