Original recipe yields 1 serving
3 slices bacon, drained and crumbled
1/2 tablespoon olive oil
1 1/2 tablespoons butter
1 clove garlic, chopped
1 package (10 oz.) frozen chopped spinach, thawed and drained
2 eggs, beaten
Garlic salt and black pepper to taste
1 cup Kraft Grated Parmesan Cheese

Let's Make It
In a large skillet, fry bacon, drain, crumble, and set aside. Add olive oil and butter to about 1 tablespoon bacon drippings to the skillet. Cook garlic in oils until lightly browned. Saute spinach with oils and garlic.
Beat eggs, garlic salt, and pepper in a small mixing bowl. Pour over spinach and scramble.
Place mixture in a casserole dish and stir in crumbled bacon and 1/2 cup of parmesan cheese. Top with remaining parmesan cheese and microwave for 3 minutes.
