2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
0.5 teaspoons salt
1.25 cups brown sugar
2 units apples
1.25 cups carrots
0.5 cups raisins
8 ounces pineapple
0.666666666667 cups cooking oil
3 units eggs
0.5 teaspoons vanilla

Let's Make It
Preheat oven to 375 degrees F. Line 18 muffin cups with paper bake cups; set aside. In a large bowl combine flour, baking soda, cinnamon, and salt. Stir in brown sugar. Stir in apples, carrots and raisins. In a medium bowl combine undrained pineapple, oil, eggs, and vanilla. Add pineapple mixture to flour mixture; stir just until moistened.
Spoon batter into prepared muffin cups.
Bake about 18 minutes or until toothpick inserted in center comes out clean. Cool in muffin cups on wire rack for 5 minutes.
