8 boneless skinless chicken breasts
Salt and pepper
1/4 cup butter
1/4 cup olive oil
1 onion, chopped
4 green onions, chopped
1 clove garlic, minced
1 can (15 ounce) tomatoes
1 bay leaf
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon chili powder
1 can (4 ounce) diced green chilies, drained
1/2 cup chopped ripe olives
1/4 cup red wine

Let's Make It
Season chicken generously with salt and pepper. In a large frying pan saute the chicken in the butter until golden brown on both sides. Put on a plate and keep warm.
Add the olive oil to the same pan and saute the onions and garlic until soft.
Add the remaining ingredients and stir together. Return the chicken to the pan. Cover and simmer for 1 to 1 1/2 hours. Remove and discard bay leaf.
