1 cups flour
1 cups whole wheat flour
0.75 cups ground flax seed
0.75 cups sugar
2.75 teaspoons baking powder
2 teaspoons ground cinnamon
0.75 teaspoons salt
0.25 teaspoons baking soda
4 units eggs
1 units eggs
0.5 cups applesauce
0.333333333333 cups orange juice
0.25 cups canola oil
2 teaspoons vanilla extract
2 cups carrots
0.5 cups pecans
0.5 cups coconut
0.5 cups raisins
1 units tart apple

Let's Make It
In a large bowl, combine the first eight ingredients. In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the carrots, pecans, coconut, raisins and apple.
Coat muffin cups with nonstick cooking spray or use foil liners; fill three-fourths full.
Bake at 350 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
