Mix in bowl with hand mixer. Heat a very lightly greased 6- or 8- inch skillet with flared sides over medium-high heat. Alba adds butter each time she cooks one. Remove from heat.
Pour about 2 Tbsp. of batter into the center of the 6-inch skillet or 3 Tbsp. batter into the 8-inch skillet to spread batter. Return to heat. Cook about 1 min. or till light brown. Turn with a spatula and cook the second side for 30 seconds.
Invert over paper towels, remove crepe. Repeat with remaining batter, greasing skillet occasionally and stirring batter if needed.
