Original recipe yields 1 serving
1 cup chopped celery
1 cup chopped onions
1/2 cup chopped green peppers
1/4 cup extra virgin olive oil
1/4 cup + 1 Tbsp. flour
6 cups chicken stock
2 lb chicken, cut into bite-sized pieces
3 bay leaves
1 can (12 oz.) diced tomatoes
1 tsp hot sauce
Salt and pepper to taste
1 package frozen okra
1 lb ready-to-eat shrimp
1/2 cup fresh chopped parsley

Saute celery, onions, and green pepper in olive oil. Blend in flour and chicken stock until smooth. Cook 5 minutes. Pour into slow cooker and add remaining ingredients except seafood and parsley.

Cover and cook on low for 10-11 hours.

One hour before serving, add the shrimp and parsley. Remove the bay leaves before serving. Serve over cooked white rice.
