Preheat oven to 375 degrees F. Chop broccoli and carrot into bite sized pieces, steam. Chop chicken into bite sized pieces, fry in frying pan with salt, olive oil, and 1 Tbsp. basil. While these are cooking, mix in bowl: cream of chicken soup, shredded cheddar cheese, cumin, lemon juice, and mayonnaise. Layer in large casserole dish as follows: veggies, chicken, sauce.
Chop sourdough bread into bite sized squares. Fry bread pieces in the same frying pan as chicken, adding more basil and olive oil if needed. Cook until brown. Place bread pieces evenly over top of casserole.
