Original recipe yields 1 serving
4 largish Yukon gold potatoes
2 large carrots
1/2 small onion
1 tsp salt

Peel and chop potatoes and carrots into smaller chunks, and dice onion. Boil together with salt in a large pot with water.

When boiling, add sausage on top of vegetables and turn to medium. Let boil for 20-30 minutes (check potatoes with a fork for doneness- there should be no resistance).

Drain; remove sausage, and mash potatoes, carrots and onion together. Serve with sausage and gravy. Apple sauce is optional on the side.
