Season chicken breast with salt and pepper then cook chicken breast through. For best results bake chicken in the oven on 350 degrees F for about 25 minutes.
While chicken is cooking, in a bowl, combine the cream of mushroom and cream of celery soups, sour cream, cheese, and poppy seeds. In a separate bowl crush Ritz Crackers extra fine. Stir in melted butter or margarine until crushed crackers look wet.
When chicken is done cooking, allow it to sit out of the oven for 5 minutes, and then cut into bite sized pieces. Combine the pieces with the soup mixture. Spread into a 13x9x2 Pyrex baking dish. Sprinkle cracker mixture over the top.
Bake for 20 minutes or until soup mixture is heated through. Serve over rice or noodles.
