Prepare pastry. Roll out half and fit into 9" pie plate. Flute edges. Preheat oven to 425 degrees F. Combine sugar, flour, cinnamon, nutmeg and salt in a bowl.
Arrange half the apple slices in pastry lined pie plate. Sprinkle with half the flour mixture. Repeat with remaining apples and flour mixture. Dot the butter over the top of the apples (I cut it up). Roll out remaining pastry for top crust. Place over filling; seal and flute edges. For a sparkly top, brush pie lightly with milk. Sprinkle with sugar. Optional: light sprinkle with additional cinnamon.
Bake at 425 degrees F for approximately 40-50 minutes or until pie is golden brown. If edges brown too quickly, cover edges with foil or crust-saver ring. Serve warm with cheddar cheese or homemade vanilla ice cream.
