Boil chicken in salted water with chopped onion until done and let cool.
Melt butter in 9x13 pan. Stir in cornbread stuffing mix and spread around in pan. Pull chicken off the bone and place chicken on top of stuffing mix. Mix cream of chicken soup & cream of celery soup with 2 cans water. Pour on top of chicken. Sprinkle cracker crumbs over all.
