Original recipe yields 1 serving
1/2 lb bacon
1 bunch green onion
2 cloves garlic
1 frozen pie crust
1 pkg frozen spinach, thawed
2 cups Swiss cheese
2 cups half-and-half
5 eggs

Brown bacon until almost crisp, add green onion and garlic. Cook until crisp, drain.

Preheat oven to 450°F. Prepare 9-inch pie plate with thawed pie crust. Layer pie crust with bacon mixture. Squeeze out all liquid from spinach and layer over bacon. Shred cheese and layer.

In mixing bowl add half-and-half and eggs; blend together. Pour slowly over cheese, sprinkle paprika over top.

Bake 15 minutes. Turn down heat 375°F. Bake until knife comes out clean, about 1 hour 15 minutes.
