Original recipe yields 1 serving
2 cups (16 oz.) whole or halved cashews
1/4 tsp honey
1/2 tsp maple syrup
2 tablespoons sugar, divided
1 small teaspoon olive oil

Preheat oven to 350 degrees F. Spread cashews onto baking pan and roast for about 8 min, mixing well after about 4 min. Allow to cool for about 5 min. The aroma will be fantastic!

Pour cashews into a food processor and add honey, syrup, 1 Tbsp. of the sugar. Put on high and every couple of minutes stop it to scrap sides with spatula.

When mixture starts to become soft and creamy, add the other Tbsp of sugar and olive oil and continue to blend. You can add more sugar to sweeten if you like. Once creamy, blend and scrape sides until sugar crystals have disappeared. Refrigerate in Tupperware or jar until ready to use!
